Q: What are some of your top spring breakfast choices?
A: I love taking advantage of seasonal produce! Some great breakfast ideas include the following, oatmeal topped with fresh strawberries or cherries, topped with protein-rich nut butter. Or you could try a spring frittata or omelet, using ingredients like asparagus, peas, and leafy greens. These egg dishes can easily be paired with a slice of whole-wheat toast or roasted potatoes. Each of these breakfast ideas incorporates carbohydrates and quality protein, which are necessary for an active lifestyle.
Q: What are some quick and easy breakfasts?
A: If you’re short on time, I love breakfast items that can be made ahead. Overnight oatmeal, chia pudding, and egg muffins are some of my favorite grab-and-go breakfasts. You can use seasonal fruits or veggies in any of these recipes. Q: What are some of your vegetarian and vegan choices?
A: All of the above options are appropriate for vegetarians. For vegan eaters, give a tofu scramble a try. I recommend adding warming spices like turmeric and cumin and throwing in tons of seasonal vegetables. Oatmeals and chia puddings can also easily be made vegan.
Q: What is your favorite dish?
A: I regularly rotate through all of these different breakfasts. That said, I’m more of a sweet versus savory breakfast person, so my number one would have to be a loaded oatmeal bowl!
